By Costa Rican law, the only type of tree, which can be harvested, is Arabica coffee, to preserve cup quality. It is strictly grown high in the mountainous, rich volcanic soils of Tarrazu, by the Llano Bonito cooperative growers who cultivate the coffee by hand.
